Malolos Food Trip: Trying Citang's, Eurobake's Inipit, and Mercy's Empanada de Kaliskis

My wife grew up in Malolos. So when my mom-in-law was still residing there before she transferred to Metro Manila, we would frequently drive up there. And when we have some free times, I try to explore the delicacies my wife used to eat growing up.

Malolos is a city in and the capital of Bulacan, the province north of the Metro. It’s also where the first Philippines republic was established, and was the capital of the short-lived republic. So this city is rich in history.

During our visits to Malolos, I tried a food spot that’s an institution in the city and two delicacies that the city is known for.

Citang’s

Established in 1970 by Teresita “Citang” Ignacio, Citang’s is a favorite merienda (snack) spot in the city. They’re famous for their Kakanin (rice cakes) and classic snacks such as Goto (porridge with ox tripe), Tokwa’t Baboy (tofu and pork), and Mami (noodle soup), among many others.

Eurobake’s Inipit

Inipit is Malolos delicacy made of 2 chiffon with a custard cream in the middle. Thus, inipit or “sandwiched”. Eurobake, another institution in the city, is where this delicacy originated.

My wife said that there are better Inipit than Eurobake’s. But I had to try the original, which I find nice. And my officemates enjoyed my pasalubong (souvenir) to them.

Mercy’s Empanada de Kaliskis

Malolos is rich in history and it even shows in its food. One example is Mercy’s Empanada de Kaliskis, whose empanada (turnover) recipe of is over 200 years old.

Empanada de Kaliskis is an with a pastry that resembles kaliskis (fish scales). It is once called Empanada de Malolos due to its geographic origins.

Mercy’s recipe came from Augustin Domingo and Justin Domingo. When it reached Augustin’s great-granddaughter, Mercilita Antonio, the delicacy was renamed from Empanada de Malolos to Empanada de Kalisikis to set them apart from the rest.

The empanada has a generous filling of chicken and potatoes, wrapped in a light and flaky pastry. The flavor is a bit sweet and spicy. I can easily 2 or 3 in one sitting!

By the way, Mercy’s was on made-to-order basis when I tried it, and I had to pick it up at the residence beside the store, which was closed at that time. So call the contact number below to order or to check if they’ve opened their physical store.
