Hill stations are towns or villages in high-altitude areas that were built to escape the summer heat. The Brits were known for developing hill stations in the Indian subcontinent during the colonial times. The Americans had the same idea in the Philippines and therefore developed Baguio City. No wonder Hill Station (the restaurant) has this vibe that it’s like a retreat from the city in the city.
Hill Station is one of Baguio’s most popular restaurants. Its menu is inspired by the travels of the restaurant’s chef-owner, Chef Mitos Benitez-Yñiguez. Located in Casa Vallejo, a hotel housed in a pre-World War II structure, the restaurant has a log cabin interior, giving a cozy and rustic feels.
Hill Station is a perfect venue for dates and special occasions (we celebrated my mom’s birthday here). It has a romantic vibe, especially with the acoustic set in the evening!
There are also items for sale, such as bottled/preserved food and pottery.
The staff served us with complimentary bread, which is served with olive oil and a mixture of spices. It’s my first time to try such a dip (the spice mixture, I meant). But I have to admit that it’s intriguing, making you want to try it more and more.

Let’s now talk about the food we ordered, starting with the appetizers. We got the Tuna Tataki, since my mom loves tuna sashimi (it’s really a seared tuna sashimi!). It’s fresh, and the wasabi mayo is not too spicy.
We also got Gambas for my mom, since she loves it. Unfortunately, my wife and I are allergic to it so we don’t know how it tastes. But my mom says that it’s good!
For our carbs, we got the Spaghetti with Grilled Salmon. While the salmon is tasty, the pasta could be firmer (at least for me) and the pesto flavor could use more salt. But the parmesan cheese easily fixed it.
For mains, we ordered the Grilled Rack of Lamb. While it could be more tender, it is tasty and juicy. Overall, it’s a good dish.
We also ordered the Lengua Estofado con Vino Tinto, which is super tender.
The desserts look good and we couldn’t skip it. So we got the Canonigo, which is a Filipino-Spanish meringue dessert. It’s super light like eating foam, leaving you with more room for others desserts!
And because my mom (it’s her birthday so we gave her all her wants!) loves Sans Rival (a Filipino dessert made with layers of buttercream, cashews, and meringue), we got their Mango Sans Rival. Its mangoes are tart and the layers are nicely nutty.
Hill Station has cozy feels, romantic vibes, and, most importantly, good food. If you’re planning to celebrate a special occasion, then consider this restaurant. I highly recommend Hill Station to you.
