Rebel Bakehouse x Yardstick Coffee: Baguio City’s Best Patisserie Collaborates with One of the Best Coffee Companies in the Country (with a Pop-Up at Greenbelt Mall in Makati City)
Last month, I finally visited Rebel Bakehouse in Baguio City (read my review here). Started by non-bakers (thus, “rebels”) during the COVID-19 pandemic in 2020 as a cloud bakery, Rebel bakes the best pastries in the City of Pines in its physical store.
But if you want to taste Rebel’s masterpieces, there’s really no need to drive up to Baguio. Rebel recently opened a branch at Maginhawa Street, the famous food strip in Quezon City, and has been operating a pop-up at Greenbelt mall in Makati City since February.
For its pop-up, Rebel has collaborated with Yardstick Coffee, which is one of best coffee companies in the country, so you can get the best of both worlds.
Aside from its menu staples, such as Rebel’s classic Butter Croissant and my favorite Leche Flan Danish, as well as Yardstick’s drinks, the pop-up has some exclusives.
On the Rebel side is the Golden Ticket Pain Suisse. It’s a bicolored pain suisse (or Swiss bread) with alternating butter dough and red dough, filled with coffee custart (I’m not sure if it’s a typo or their own word) with almond frangipane, then dipped in Callebaut milk chocolate, and dusted with fine Golden Ticket coffee beans. Now that’s a mouthful!
The Callebaut milk chocolate is decadent (and my favorite part of this pastry), and the coffee filling is strong. However, I wish that I got a freshly baked one so there’s more crispness to it. Still, it’s a good pastry and also a work of art!
On the Yardstick side, one of the exclusives is the Breakfast of Champions, which is composed of espresso, oat milk, and peanut butter cream. This is for peanut butter lovers like me!
I got the cold one and it’s refreshing. The peanut butter cream has a nice hint of peanut butter flavor.
There are a couple more Yardstick exclusives, namely &Soda (which is your choice of coffee or matcha soda) and the Lemon & Lime Soda, which is a non-caffeinated soda. I hope to try this while the pop-up is still there (it’s only until June 1, 2024!)
