Rebel Union: Baguio City’s Rebel Bakehouse Collabs with La Union’s Del Union for a Pop-Up at The Podium (It's Only Until November 30, 2024!)

I’m such a big fan of Baguio City’s Rebel Bakehouse (read my review here) that whenever it has pop-up in Manila, I always make sure that I visit it. Last time it did a collab with Yardstick Coffee at Greenbelt Mall (Makati City), I tried their Golden Ticket Pain Suisse and the Breakfast of Champions drink, which were both amazing (check out my article here).

So when Rebel opened pop-ups at Power Plant Mall (Rockwell Center, Makati City) and The Podium (Ortigas Center, Mandaluyong City), I went as soon as possible. They have pop-up exclusives, including Chocolate Cruffin (Made with KitKat), Turkey Ham and Cheddar, and Vanilla Pain Suisse.

The Pop-Up Exclusives

All exclusives are good. But what stands out for me is the chocolatey 4 Choco and the tart Lemon Meringue Danish. It’s perfect to be paired with coffee!

But just when I thought that things couldn’t get any better, Rebel announced that they’re collaborating with La Union’s Del Union (or El Union Coffee). The surftown cafe is known for their Dirty Horchata, which inspired the collab’s pastry, Drunk Orxata Flan. It’s like Rebel’s Leche Flan Danish but infused with coffee liqueur and Del Union’s rice tea. I can certainly taste the rice tea flavor from this bad boy!

The pop-up also offers Del Union drinks, including the Dirty Champorado drink. To the uninitiated, champorado is a Filipino chocolate rice porridge. I was trying to figure how they turned the classic Filipino breakfast/merienda (afternoon snack) dish into a drink. Then I realized that they might just be calling the drink champorado because it’s a chocolate horchata. LOL.

Anyway, it’s like a Mexican chocolate drink. It’s spiced with cinnamon and has a nice chocolate flavor. I like it!

Another pop-up item is Del Union’s Toasted Rice Coffee Soda. It’s fruity and fizzy, with a hint of bitterness from the coffee and a nice toasted rice flavor.

I don’t know why but I’ve recently started to like coffee mixed with juice or soda (I couldn’t believe it works!). That’s why I find Del Union’s coffee soda good!
